Three Roll Estate

BATON ROUGE – Three Roll Estate, now Oxbow Rum, had 2,300 gallons of flawed white, gold, and dark rum from a prior distiller. The rums had overly tannic notes that were mitigating the inherent flavors of the spirit. Three Roll was considering either selling the rum to Exxon for fuel ethanol or dumping the entire batch. With the help of Steric Systems, Three Roll was able to find the preferred processing level to properly rebalance their flawed rums. After some time with a tasting team, Steric Systems and Three Roll found the ideal processing levels for their white, gold, and dark rums. From there, Steric set up their AIR Unit, capable of processing 300 gallons an hour, to their tanks and processed their entire volume in just under one business day.
